BEST Pumpkin Cookies Ever!

From the 1986 edition of the Better Homes and Gardens Cookbook.  You know the one.  The red and white checkered cover.  The one your mother had, and your grandmother.  All the cookbook you ever really need, and they have a new edition every year.  AND they put out a special PINK edition to support breast cancer.

Plump, soft, cakey deliciousness, I’ve made these cookies every year since 1987.  EVERYONE who has ever tried them goes crazy for them- even people who are not pumpkin fans.  I have used fresh pumpkin (from our Halloween jack-o-lantern) as you can see by the handwritten notation to adjust the flour.  I recommend Imperial or Blue Bonnet for the butter/margarine.  Sometimes I use nuts, usually pecans or filberts (as I do not care for walnuts), golden raisins, regular raisins, dried diced apple, or Craisins, a combination of the aforementioned, and sometimes I just leave them plain.
